Tacos for breakfast in Melaque, Mexico

Melaque taco standThat's right we eat tacos for breakfast, and I'm not talking about egg and cheese in flour tortilla type of tacos.  Oh no, I'm talking about the real deal; asada (grilled beef), pollo (chicken), adobada (spicy pork), and chorizo, lengua (tongue), cabeza (head), and labio (lips).  We pile on the beans and salsas and enjoy our culinary delights at street side taco stands.  Pedro's has always been our favorite it's located just off the main jardin, this family-run taco stand offers up generous tacos and friendly service. 

What makes a good taco?  First and foremost it's a handmade tortilla! All the tortillas in our seaside paradise of Melaque are fresh and made daily, but it's the handmade tortillas; formed, pressed and cooked to order that really give a taco its authentic flavor.  Secondly, it's the salsas and each stand has their own unique take on what makes a good salsa.  My favorite is a Salsa Mexicana; tomatoes, onions, cilantro, jalapenos all coarsely chopped and mixed together, I like an avocado cubed up into the mix as well. 

Did you know that if you are dining at a taco stand on the Pacific coast of Mexico you won't find cheese or sour cream in a taco?  You put cheese in a taco and it becomes quesadilla!  And only white cheese, you won't find yellow cheese at any self-respecting Mexican food restaurant or taco stand in Melaque!
